Box Hill Confections artisan truffles and chocolates are handcrafted in Maine in the European tradition. We use high-quality, fresh ingredients, procured from local farms and growers whenever possible: heavy cream from local dairies, real butter made with local cream, Maine sea salt, Maine maple sugar, Maine blueberries, and local wildflower honey. We select other ingredients from around the world: tart cherries from Michigan, California almonds, Piloncillo sugar and chipotle pepper from Mexico, spirits and liqueurs from France, uniquely fragrant Vietnamese cinnamon, cardamom from Guatemala, El Rey single-bean chocolates from Venezuela, and more.
As you taste our chocolates and truffles, you will note several things.
First, working with a palette of El Rey single-bean chocolates and natural ingredients we strive to create full, rounded flavors that harmonize with the character of the chocolate, rather than overwhelm it. When you bite into a Box Hill truffle, let it melt on your tongue, and listen to the low, middle, and high flavor notes as they develop.
Why El Rey? El Rey chocolates are each created from a single, home-grown source of high-quality carnero superior cacao beans. Like a single-malt scotch, this gives them a unique character not found in blended products.
Second, we use a judicious blend of chocolates plus fresh cream and butter to create a superb natural “mouth feel.” We think that truffles should taste and feel luxurious.
Lastly, we refrain from using artificial flavors and overly processed ingredients. When we add lemon, for example, it is in the form of fresh lemon juice or lemon oil pressed from the skin of real lemons. Our raspberry puree is concentrated from real raspberries, sweetened with a little cane sugar, and highlighted with real lemon juice. We use real liqueurs and spirits, not artificial extracts. We think you’ll see the difference in the flavor.
